Holiday Shrimp Scampi
3 tbls. Olive Oil
5 Jumbo Shrimp
2 tbls. Ground Fresh Garlic
2 tsp. Mexican Oregano
1/4 Cup Slcied Mushrooms
1/4 Cup Diced Tomatoes
1/4 Cup Chopped Artichoke Hearts
Juice of half of a lemon.
1/4 Cup White Wine
1 tbls. Butter
1 1/2 Cup Cooked Pasta
Salt & Pepper to taste.
In saute pan, heat oil until you see wisps of smoke coming off. Add shrimp and stir frequently. When half cooked, add garlic, stir then mexican oregano .
Add tomatoes, artichoke hearts, mushrooms, stir. Add lemon juice & white wine.
