Elle's Cured Gravlox

2 3-pound salmon fillets

2 tablespoons garlic powder

2 tablespoons onion powder

2 tablespoons ground cloves

2 tablespoons ground bay leaf

2 tablespoons ground mace

2 tablespoons ground allspice

3 pounds kosher salt

2 pounds brown sugar

Put salmon in a container large enough to lay each fillet flat. Mix ingredients and completely cover salmon. Cover with plastic wrap, weight each fillet (use large canned goods or a wrapped brick), and refrigerate for 48 hours. Rinse fillets and let dry uncovered in the refrigerator overnight.
