2 eggs

4 tablespoons sugar

1 1/2 tsp vanilla extract

1 1/2 tsp baking powder

1/2 c milk

4 c all purpose flour

2 quarts of vegetable oil for frying

1/4 c honey

1/4 c confectioners sugar for dusting

1 tablespoon orange zest

1. combine eggs, sugar & vanilla & orange zest  in a large bowl.  Mix together baking powder & 1/2 c flour. fold flour mix to egg mix.   Add enough of remaining flour to thicken mix.  Let sit for 1 hr.

2. Heat oil in large heavy skillet over high heat.  Let heat up approx 3-5 min.  Drop batter by teaspoon into hot oil & deep fry until golden.  Remove with tongs & drain on paper towels.

3. Stack sfinigi on serving platter.  Drizzle stack with honey & dust with confectioners sugar.
