"Smoked Salmon Cakes": Chef Michael Veres

Cibaria Cucina Italiana

2 cup Smoked Salmon

3/4 cup Mayonaise

1/4 cup Diced Red Onion

1/8 cup Capers

1/4 cup Lemon Juice

2 tbpn. White pepper

1 tbsp Granulated garlic

1/2 cup bread crumbs

In mixing bowl, add all ingredients. Mix and mash until throughly incorporated.  Form patties, 2 1/2 to 3 oz. each.

Lightly bread again before sauting.

If the cakes are too dry, add more mayo and/or lemon juice. If too loose, add more bread crumbs to reach desired consitency.
